1 lb. baby potatoes
3 tbsp olive oil, divided use
1 tsp salt
2 tsp garlic powder
1/2 tsp pepper
1 tsp caraway seeds
1/2 cup cheddar cheese
Preheat oven to 425 degrees
Quarter the baby potatoes
Toss potatoes in a bowl with 2 tbsp olive oil, salt, garlic powder, pepper, and caraway seeds.
Add 1 tbsp to a cast iron pan
Sauté potatoes on med-high heat until potatoes are browned
Stir potatoes
Transfer to oven for 15-20 minutes until potatoes can be pierced by a fork
Add 1/2 cup cheddar cheese and bake until bubbly
