We absolutely love this recipe from Sammi Brondo.
For the base:
1 cup walnuts
1 cup dates (soaked in warm water for 10 minutes)
For the chocolate layer:
1 cup chocolate chips
1 tsp coconut oil
Sea salt (optional)
Drain and pat dry the dates.
Put the walnuts and dates into a food processor.
Process until mixture is sticky.
Press mixture into the bottom of a parchment paper lined bread pan and place into the freezer for 10 minutes.
Put chocolate chips and coconut in a microwave safe bowl. Put in microwave for 20 second increments, stirring between each increment.
Pour chocolate on top of date and walnut mixture. Sprinkle sea salt on top.
Place in the freezer for an hour.
Cut into squares and enjoy!
We find it easier to cut if we let it sit out for 2-5 minutes. Then we store them in a container in the freezer.
