We absolutely love this recipe from eatyourselfskinny. I slightly adapted it for our sugar/DF needs.
For the filling:
5 cups apples, peeled and thinly sliced
1/4 cup maple syrup
1 tbsp lemon juice
2 tsp vanilla
1 tbsp cornstarch
1 tsp cinnamon
1/2 tsp apple pie spice
1/4 tsp salt
For the Crumble Topping:
1 cup rolled oats
1/3 cup oat flour
1/2 cup pecans, finely chopped
1/8 cup coconut sugar
1/4 cup maple syrup
4tbsp butter replacement or solid coconut oil
Preheat oven to 350 degrees and grease a 9x9 pan.
In a small bowl, mix together cornstarch, cinnamon, apple pie spice, and salt for apple filling. Set aside.
Peel apples. Add maple syrup, lemon juice, and vanilla. Mix together.
Add dry ingredients from step 2. Mix well.
Place mixture in pan.
In a medium bow combine all ingredients for crumble top, adding the butter last. Mix butter in with a pastry cutter, or like I did, with your hands.
Sprinkle crumble top over apples.
Bake for 40-45 minutes.
Serve by itself or with some dairy free vanilla ice cream.
