1 1/4 cup rolled oats and 3/4 cup rolled oats, divided
1 tbsp baking powder
1/2 to 1 tsp cinnamon {I use ceylon cinnamon}
2 tbsp olive oil
3 tbsp honey (maple syrup, organic cane sugar, date syrup)
3/4 cup Greek yogurt
1/2 cup milk of your choice (we use almond)
2 eggs (or flax eggs; 2 tbsp flax meals to 4 tbsp water)
1 tsp vanilla
Add everything {except the 3/4 cup of rolled oats} to a blender and blend.
Add 3/4 cup of rolled oats and stir by hand. Do not use the blender to blend these in.
Let mixture sit for 10 minutes.
Cook pancakes until golden brown on each side.
Serve with maple syrup, fresh fruit, crushed walnuts, or jam.
