1 tbsp olive oil
1 regular egg or 1 flax egg {1tbsp of ground flax, 2 tbsp of water} Let sit for 5 minutes
2 tsp vanilla extract
1/3 cup honey
3/4 milk of choice {we use almond milk}
3/4 applesauce
2 cups oat flour
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
1 1/2 tsp baking powder
1 tsp baking soda
2 cups fresh blueberries
Preheat over to 350* and prepare muffin tray {we used a silicone muffin tray}
In a large bowl, mix together olive oil, flax egg, vanilla, honey, milk, and applesauce.
In medium bowl combine flour, cinnamon, nutmeg, ground ginger, baking powder, and baking soda.
Stir dry ingredients into wet ingredients until combined.
Let batter sit for 1 minute.
Fold in blueberries.
Pour batter into muffin tins using 1/4 cup increments.
Bake at 350 for 20-25 minutes or until toothpick comes out clean.
Allow muffins to cool completely for at least 10 minutes.
